I'd say Standard, Forest, or Four Corners. Among the bachelorettes, I'd imagine Haley (loves sunflowers), Emily ("sometimes the flowers speak to me... and each one has a different story to tell"), or Leah (especially if you pick forest farm). Among the bachelors... Harvey or Elliot.
It would be cruel to put Sam with his pollen allergy on a flower farm. Shane, Sebastian, Alex, Maru, and Abigail aren't all that interested in flowers. Penny, well, she loves poppies, but...
If it was a story, it would be kinda fun if the character had been forbidden to grow anything but flowers, and turn half of the field into a cauliflower patch each spring and go "What? It's a flower. It's even in the name!"

Since Blueberries are only summer, this seems a bit hard, but maybe one with Strawberries only in Spring (NOT counting the year one's first week-and-a-bit before the first Egg festival, just to make this possible) blueberries in summer, and Cranberries in fall? Only Blueberries in the greenhouse and GI, though...

Making gold just from fruit. Making gold just through mushrooms. etc.
How far can you get with the Community Center through the Traveling Cart/Gifts given by NPCS?
How fast can you get the desert unlocked? Ginger Island unlocked? How fast can you get the sewers unlocked?
Making gold from fishing, mining only (etc). You can do other skills/up your other skills, but you can only make gold through one skill.
Making Gold through cooking only. You can get cooking kit through foraging level 3. You also take a lot of friendships with this. Could be interesting if you normally ignore friendships until later.
One crop per season? So say you choose potatoes for Spring, you can only grow/make gold off that crop. Summer, say you do Melons, etc. You can use Preserve Jars/Kegs, but just using that one crop.
