I stopped aging wine completely, I like getting a bunch of goats to produce gold quality cheese and then it takes just a week for them to get to iridium quality. Wine takes too long for me so I just sell it right from kegs
I sometimes age wine to gold quality, then using fairy dust to hurry up the process by up to a season, but that's not profitable for most fruits considering fairy dust cost 1000 G if trading 1 mystic syrup for 1 fairy dust with the raccoons (or slightly more if making it with diamonds and fairy roses). For ancient fruit it's a profit of 155 G per bottle, and 575 G per bottle for starfruit wine, and a loss for any other fruit.

I do cheese until I've got enough starfruit wine for a full cellar and enough mystic syrup to pay for the final step.

With diamonds from a crystalarium and a fairy rose plantage on GI and using a seed machine to reproduce fairy seeds you can craft it by yourself and save Up your mystic syrup. Birdie gives you the recipe after solving her quest. Just an Idea...

I know, and I was basing the price of fairy dust on what you'd get by selling what's used to get it. Crafting it is more expensive. A diamond sells for 750-974 G (higher price for Gemologist even if I don't have that) and a fairy rose sells for 290-478 G (higher price gold quality + Tiller, not counting iridium quality), so 1040-1452 G, compared to the 1000-1250 G (higher price for Tapper but I've never had that profession) that one can get from selling a mystic syrup. The highest price for either route wouldn't leave much profit with even starfruit wine.

Tapping the growing grove of mystic trees I make for the mushroom logs leaves me with a fairly large stack of mystic syrup by the time I start needing it and being able to trade for fairy dust. Moss is the limiting factor when it comes to the crafting recipes that use mystic syrup, because mushroom logs...

I have a bunch of moss saved up that's should be handy when I get to that stage.

Moss is used for a number of things, and if you've got a mushroom log farm it will take years before you get out of the "could always use some more" phase. In Fall of year 2 I've got almost enough mushroom logs for two avenues of my grove, the two at the back not having any at all. I've probably used more than a full stack between the various crafting recipes.

Even if you don't grow mushrooms, you can count on needing 350+ once you can enter the mastery cave, a bit depending on what mastery you pick first. I kept that in mind for my current save, to avoid the annoyance I experienced last save where there was one really useful thing that I had to wait about half a year to craft because I didn't have enough moss.

I don't like mushroom logs tbh. I save up all the moss I can.

Because they look ugly imo. Also not a fan of mushrooms in game.
And for what?
IDK. I just like hoarding. I have 12+ diamonds just sitting even tho I could sell them or just make more geode crushers.(I have three because Clint closes WAY too early.)

I put them in my tree farms and theyre barely visible there, and mushrooms are amazing for putting them in dehydrators, preserve jars or eating in the mines.
I always use quick stack without paying attention, and a lot of things like gems just hoard up with time. And then I see like 75 diamonds sitting in the chest which is a nice random money boost

I personally like just having them lol. Same as you with the quick stack.
