Well, mining alone burns 300-500 calories per hour and farming burns around that same amount BUT we also have to factor in all of the running the farmer is doing
it also depends on your play style if your farmer makes most of their money from animal products such as milk or eggs , then the calories that they burn will be less

well, if you think about it, actual iridium is highly radioactive, so the farmer is also getting radiation poisoning and not batting an eye!

The two iridium isotopes found in nature are both stable, not radioactive. It is, however, highly corrosion resistent, high density, and very high melting point. The original kilogram prototype was made with 10% iridium in the alloy, which would be a stupid thing to do if it was highly radioactive and thus losing mass.
I have some farmers in my family and believe me when I say they can eat a LOT

The farmer's cheese and milk intake at least is true to my own lived experience. I don't eat as many Lucky Lunches in real life though, sea cucumbers aren't stocked in my local grocery stores! Maybe the better question is, how injured is your farmer getting? It's either not very much damage (if mere snacks can heal it) or it is a lot of damage and the farmer has the metabolic rate of Shai-Hulud.

All of these things tho I dunno about the radiation. Farmer Bobbi came to the valley as a slightly extra-well-rounded person though with good upper body and core strength due to her Joja day job and competitive driving night job. And it's super-important to keep your impressive physique well-insulated from the cold and whatnot, right? But after coming to the Valley, she has added general body improvements from Mastering The 5 Ways and shed some of that insulation as the weather is nice most of the year and there are fun clothes to tailor for the rest!
But Bobbi kept some of her padding for those mineshaft falls and OP's question. Some days she forgets to eat and some days she horks down Cheez and Lucky Lunches like a crazed, emaciated hyena. Plus the excessive Coffee drinking is totally a metabolism maximizer. There's always a little extra Bobbi for the lean times and that's paid in full by the cheez times.
Plus Emily likes it.

The muse of fantasy wears sensible shoes, as I think it was Lloyd Alexander who said. We are much more likely to get stuck on the weird little things that are counter to reality than the overtly magical stuff. Dragons, sure, this world has dragons. Cave monsters? sure, I guess. Evil witches and fairies, well, that's practically tradition. Dwarves who might actually be aliens? Well, it's an interesting twist on the traditional.
But OMG, what about the fish who can be kept in a fridge, or worse, a chest, for months or years, then be thrown in a pond and start swimming around, or the bunnies that are the only animals which you can buy in both genders and yet, contrary to their real world reputation, are the only ones which *don't* breed? Or, yes, the farmer who sometimes eats nothing at all for 6 days in a row and sometimes consumes 15 blocks of cheese and 2 full dishes of spicy eel in 2 hours.
