So after bit of time testing I've found a way to get Crossplay working between mobile and PC without needing to be next to each other
First you have to enable the hidden feature on mobile for co-op, this link shows you how to do this really easily https://www.youtube.com/watch?v=g_KXRyF-tDc
Next, on both PC and Mobile I've done this with NordVPN using MeshNet, It's completely free so don't need to buy a subscription. Download NordVPN on both devices and sign in, using same or different account (e.g, you sign into one with your account and your friend signs into theirs with their own account)
Next you need to enable MeshNet and link devices with an invite, this can be done via the link to the video, Ignore when they say it's not possible between PC and Mobile, it is possible and been using it all day

Once devices are linked and you have the IP of the host as described in the video, The host needs to create a co-op game, For this example the PC will be the host. The Mobile then needs to go to Co-op and select join, and then enter the IP address of the host which will show in NordVPN and join the game. This will also work the other way around if the Mobile is the host, the PC will just need the Mobiles IP from NordVPN and can connect the same way using Join
This works by connecting the 2 devices (or more) via a VPN to appear like they are on the same network without needing to host a server or be next to each other
And for a bonus thing, it looks like the chat option on Mobile was disabled but, this video shows you how to enable it if the Mobile is the Host https://www.youtube.com/watch?v=DoSTxFguS9A,
This also works if the PC is the host as you can go to the exact same file location on PC within %appdata%\StardewValley\Saves\ and select your co-op save file, Open the save file in notepad and edit the field which says <allowChatCheats>false< and change it to <allowChatCheats>true< then save
This will allow the mobile device connecting to use the chat feature by pressing the date in the top right of the game when playing

Also a Bonus Bonus Thing, Technically with this method using NordVPN and the Meshnet it could be possible to crossplay PC and Nintendo Switch, I've not tested this yet but in theory it should work, be nice to know if anyone has already tried this
