[Slightly Spoiler] What is difference between Caviar and regular pickled fish roe?

I read Wiki for Caviar but I don't understand why Caviar must be made by Sturgeon roe rather than common fish roe.
The picture of Caviar is also different than other pickled fish roe jar.
It looks more luxurious and unique.

In terms of functionality, Caviar in this game seems nothing different than other food/cuisine.
It provides decent extra energy(+175) and health(+78) volume.

Whereas, it is not easy to get as Sturgeon is not a regular species.
You can only catch them off in specific seasons and areas.

If you want to get their eggs/roe, you have to build a pond.
It will be a devious route for players to get the Caviar.
That is the reason why I say Caviar is not that common.

As others have said, it's pretty much just an abritrary distinction made to mirror something in real life without having to create dozens of subcategories, Ereo mentioned raisins which is also a good example of making some items more in line with their real life counterparts to even add some more function to something (in this case fish ponds, in that case the dehydrator and dried goods as a whole).
 
Caviar has a place in the missing bundle. The others do not.

I thought it is just a kind of cuisine/cooking.
I made some fish roe jar but I had never seen caviar!
Finally it was identified jar of sturgeon roe!
It sounds like pale ale, I spent a lot of time to figure out how to make a cup of ale!

It looks a little counterintuitive.
You know that most fish roe jars are similar maybe just different colors.
So does wine!
I think it is a trick the designer set for surprise.
It looks rarer than regular jars.

I think it's rather nice too, variation without being overbearing is difficult to do, I'm not saying that the way they were implemented was perfect but you can still benefit from the positives of an imperfect system

I know that people may wonder why caviar would be less expensive than some other aged roes (like Aged Lava Eel roe, for example), especially since caviar takes one more day to proceed, but in the end, this is just a game where fun and roleplay are also there for the sake of it.

Otherwise I will never know how to make a caviar!
As I said, I didn't have knowledge caviar is made of sturgeon roe!
I thought I would try my best to find mystic cooking recipe and give up re-build Joja supermarket finally.

Yes, the only mild complaint is it is nothing different than other fish roe jars regardless of function or price.
The only thing excited is it has unique icon/picture and name.
That makes it premium and luxurious.
I stored 50+ for collection and will not eat them.

No, the whole point is that it is different. Gifting gives different results than other aged roe, it has an exclusive place in it's own bundle, you can tailor it into a hat not obtainable in any other way, and so on.

It absolutely does have its own uses in function (and price isn't really comparable as the sell price of other fish aged roe is a spectrum too)
