trying to run SV on my 2020 macbook air, i’ve already purchased SV through my apple account. when i go to the main stardew valley page and click the symbol to install on ios i’m brought to the app store and met with this. “not compatible with this device…” ive seen other players mention running it through steam on their mac but i’d have to repurchase the game if i went that route. is there a way around this?

I suppose there are a lot of models of Macbook
It will be better for you the to go through the compatibility list of devices for MAC devices
And make sure your model of MAC is on the list

Not like Windows, Mac is somehow like Steamdeck
Some of Mac devices are compatible with Steam, some are not

No need to buy the game again
If your device is not compatible with Steam MAC, nothing will happen even if you re-buy the game.

The iOS version of Stardew Valley only runs on iPhones and iPads, which run iOS. To run Stardew on your Mac, you need the macOS version of Stardew, which you can buy from Steam or GOG and maybe the Mac App Store? Your 2020 MacBook Air is new enough to run Stardew, I run it on a 2015 Mac and I've gotten it running on a 2012 and the 1.5.6 version even runs on a 2009 MacBook!

Edit: I just checked and Stardew isn't available from the Mac App Store so you'll need to buy it from Steam or GOG. It's usually $15 but goes on a small sale pretty regularly for $12.

Yeah, the iOS version is for playing on iPhones or iPads. If you don't wanna play on either of those you could look into getting a refund and then purchase the game on Steam or GOG to play on your Macbook.
