I get so overwhelmed with all the wikis and videos and such about profit margins on things. Is there any place that has a simple spreadsheet or list of artisan goods and what they sell for?
For example, I have ducks, chickens, and void chickens. Which eggs make the best mayo? That kind of thing. Goats and cows, which milk to make cheese and which to sell as is... It's so overwhelming!
For reference I have cows, goats, sheep, pigs, duck, chickens, dragons, and void chickens. What do I do with it all?

That is going to depend heavily on which perks you have. As far as comparing animal product profit margins, that depends on if you're talking per each of per season.
At level 5 and level 10 of a skill, you get to pick one of two perks, some of them will impact pricing.
For the animals listed (other than the dinosaurs), I'll break it down by building.
For the Coop, which can have chickens, ducks, and void chickens, it's a toss-up between the chickens and the void chickens. Once chickens level up, they consistently lay Large Eggs, which turn into gold-star mayo which is slightly more expensive than the void mayo the void chickens lay. The dino mayo sells for much more per each, however they lay infrequently enough that the daily output of chickens will beat it.
For the Barn, I don't use it to make money, I use it to make Gold Star Cheese (from Large Milk) for dungeon-delving food to restore health and energy. Pigs are generally the most profitable animal for the barn, with cows behind them because goats aren't milked daily. Sheep are an oddball case where a specific blend of perks can cause them to be profitable, but otherwise generally either pigs or cows will be your better bet.
Unless you have specced into Rancher, it's generally better to process than to not process, especially if you have Artisan.
