Maybe this forum will finally be the place where I find THE tricks needed on how to catch an octopus because I have sadly failed to do that in the 600 hours that I put into this game oops.

I've caught my fair share of octopi, and I'd say that the better bait and hooks you have, the higher your chances are. Good luck friend!

I actually bought an octopus from the traveling merchant! Fishing can be frustrating.

Fishing can be difficult -- even more so when trying to catch a certain fish/the difficulty of the fish you're needing to catch.
It took me so long to be able to learn to fish, it's an interesting game mechanic for sure -- and I still have issues on many harder/rare fish!! ​
