So you can still see what you have and haven't cooked, though you'll have to go to your kitchen or cookout kit to see exactly what recipes you don't have unlocked yet
That isn't necessary, you can see all the recipes under Collections or whatever the tab is called. Same place as all the fish and so forth are located.

Recipes you have cooked are lit up.
Recipes you know about, but haven't cooked yet, have a fainter image.
Recipes you don't know yet have an outline, and will show "???" when you hover over it. Pretty similar to unknown artifacts and minerals, and unshipped crops etc.

Perhaps on 1.6 but that's not how it previously worked on 1.5, you can learn a recipe and it'll still be black and show '???' when clicked on

At least on mobile, it’s the same on 1.6: the cooking collection will only show what you’ve previously cooked, the kitchen shows what you’ve learned.

Yeah might be a mobile thing, checked PC 1.6 and it's as was said with the fainter image, though it's been ages since I cooked something on pc so I don't remember what it was on 1.5

It's quite easy to check by just popping into your cooking tab in the inventory and scouting what you don't yet have unlocked
True, but when you have artefacts and minerals that can give you a heads up for things, the books should do it too, from a game design perspective. It's not like they're some of the other books like bearberry tips, or lost books and things that get auto added to the library or your inventory. I think it would be a good addition for a QoL update
