hi When i want to take something, the game says inventory is full how can i make it empty?

Both myself and my SO are having a very difficult time seeing the very tiny numbers in the inventory and toolbar. I have the UI set to 150% and it's not changing much. we are using a 65 inch 4k Ultra TV. is there anyway we can make those tiny numbers bigger when we are playing split screen?

I kept all items in the inventory for the quest and did not move them into a storage of some sort. I should have "gathered" more items according to the log of the quest, than I actually have received for my inventory; see screenshot. This issue remained even after I have "completed" the quest.
