If you're having trouble catching a gold/iridium-quality salmon, I would recommend using a quality bobber! You can dig one up on ginger island after reading one of the journal scraps, or you can craft one after completing Willy's bug meat quest.

after the center,joja is gonna get terminated and then when you go to sleep,a cutscene will trigger,opening the joja and you have to get in to complete "the missing bundle"

It is actually possible to spawn in items with quality, though it requires access to console commands that are otherwise limited within the game and require file modification or use of outside tools such as smapii to access (which is why many call them mod commands)
As for getting it in game, you just need to cast as far out into the water as possible, so long as you're on a tile that's decent (pick a corner tile on the swap so that you're as far from the majority of land as possible), there's a pretty solid chance for a base gold void salmon that you don't even have to perfect catch. You can of course use a quality bobber too, or a cork to try out that perfect catch if you don't have a quality bobber.
