Wine aging

Hello everyone, this is my first time posting and I am confused about the wine aging process. So I placed starfruit wine into casks on spring day 20 and it is now spring day 6 of the following year and my casks have not reached an iridium quality. From my understanding, it takes 56 days from the time placed for it to reach iridium. What am I missing?

Yes. They are currently on gold star but it’s been way longer than 56 days.

No mods. My cellar is full of casks all on gold star. And yes when I broke one it was gold.

it should only take 56 days to age, have you removed the wine early? that might've set it back a day or two. also has this happened to you before because maybe it's something with the software. i've never heard of it taking that long.
