That’s the best part of open-ended game art - unless Concerned Ape posts an official statement or it’s listed on the Wiki, there’s plenty of room for both exact real-world comparisons and fun fan theories. I just love seeing all the different ways people interpret the game.
Except that the question was "what is the sprite based off of?", not "what pepper does shane like in his poppers?".
It changes the answer dramatically, and one is based off of a visual representation, while the other is based off of subjective imagination.

I've explained my take and used Shane's poppers as a fun and logical example for my speculation, alongside the actual visual representation of the pepper. I don't see any need to debate semantics, and am happy with my responses, so I'm leaving it at that.

In the end it’s up to the player’s interpretation. While the sprite for the hot pepper crop does look like Cayenne, the sprite for the pepper poppers dish looks like a completely different pepper! (not to mention pepper poppers made with cayenne doesn’t sound optimal) Maybe the player can manipulate the shape and flavor of the pepper somehow by cooking it or something. OR this specific variety of peppers might not exist for us! We know the Valley does that on occasion.
