Sweet gem berries making artisan goods would admittedly be overpowered, and so an idea would be super sweet products that take extra long to make and can't be instantly produced with fairy dust. The ideal length of time would be 2-3x, as sweet gem berries are worth drastically more than any crop in the game

The whole point of SGB is that they grow whole month and aren't processable.
To be entirely honest they're strong but not absolutely crazy if you allow them to be processed.

You still have the inherent drawback of having to turn half your yield into seeds if you want to maintain a decent amount so while they would become the strongest crop in the game, it wouldn't be by much (and you'd have a similar situation to ancient fruit with a super slow setup)

I think having them be processable but have some limitation like them being less affected by processing machines (2x instead of 3x in kegs for example) would allow them to be viable and actually be a crop with a more unique mechanic than "buy seeds from pierre/sandy and plant them, repeat"

It would end up as another ancient fruit wine. Also kegs or jars use time for balancing usually.

And the game is already in a state where Artisan is the go-to even for animal artisan goods.
