With starfruit, you can get it to grow in minimum 9 days, and each seed costs 400g. We can then see how much gold it makes per day by doing this: (3150(starfruit wine price)-400(seed price))/9(days it takes to grow) is 305.5555555 (you get the point) so ancient fruit is actually more profitable than starfruit

This is factually incorrect, you can get starfruit down to an 8 day growth cycle but even beyond that, there's a flaw in the thinking. While a single harvest crop may have a single cycle of say 9 days, due to the overlap of the grown harvest day and the planting day, that cycle is effectively 8 days when considering more than a single harvest.
Therefore, starfruit can be brought down to a 8 day cycle (single growth of 9 days) (using hyper speed gro or deluxe speed gro and agriculturist), or a weekly 7 day cycle (single growth of 8 days) (with hyper speed gro and agriculturist) to match ancient fruit
For starfruit, in the case of the former it's 2750/8 or 343.75g per day or in the case of the latter it's 2750/7 or 392.86g per day versus ancient fruits 2310/7 or 330g per day, worse than both (at least so long as you aren't profession swapping for a single plant for example as the cycle to swap agriculturist->artisan->agriculturist is 20k, though that's a meaningless amount once you have any considerable amount of either crop up).
