If you're down for modding the game (and are on an appropriate platform), you can totally add different varieties of sheep, though I'd assume most are cosmetic differences and don't really play into gameplay that much

If you're suggesting a change, then you could try making the same/a similar post in the game suggestions part of the forum, sometimes the developers swing by and take a look
