Switch Merchant stock not updating

I'm having the issue that some merchants aren't updating their stock. Specifically the Raccoon shop and the Island Trader.

I'm at the end of Year 2. I've completed up to and including the "juice" quest for the raccoons, but the shop still only contains the seed spot seeds.
Additionally, the Island Trader doesn't trade regular coconuts for golden coconuts, even though I've cracked open like 8 golden nuts at this point.
I'll add screenshots for both these issues.

I'm playing on Nintendo Switch, game version v1.6.9 build 37. I'm playing singleplayer, my language is on English.

I've had this same problem! 1.6.9 on Switch, single player, Meadowlands Farm, community center completable Y1 seed.

One additional weird thing that happened on my end is that the Raccoon Journal, Raccoon Hat, 5 Fairy Dust, and Jungle Tank all spawned automatically after I finished the quest that was meant to make them available for purchase. I know I'm lucky to have them at all with how common this bug seems, but I am unable to purchase more.

I was also gifted one of each of the rewards (except the Jungle Tank, but I haven't completed that quest yet). So it looks like the quest rewards work as expected, but the shop isn't being updated when quests are completed.

I haven't checked the island trader, but I'm having the same problem with the raccoon! I'm on the four corners farm, year 4 or 5, and whenever I complete one of their quests it says the shop has been updated but it's still only the seasonal seeds. I didn't even realize I wasn't getting the updated shop until I was watching someone stream stardew on pc and saw their raccoon shop
