I'm assuming you have the Artisan perk in farming, which makes a huge difference to the profitability of almost everything. The Angler perk in fishing is important too. Definitely add animal crackers to your fish ponds. Truffles, aged starfruit wine, and a massive amount of starfruit and/or ancient fruit wine are still the biggest money makers I know of. Aging goat cheese is more profitable than you might think, given how fast it can be produced and how fast it ages. Pumpkins made into either juice or preserves are a good sideline, as well as preserved pineapples and dehydrated rhubarb. (I save the kegs for the best wine and thus make pineapple preserves.) I also give dinosaurs animal crackers and sell their star-quality eggs after getting the Treasure Appraisal book - much more profitable than dino mayo, but not a huge source of income in the greater scheme of things. Still, it all adds up. I think ostriches are more profitable than a lot of other animals too although I'm not a big fan of them for whatever reason. Occasional fishing expeditions are another good sideline to get high-value fish like super cucumbers, blobfish, and so on, which can be smoked over time, especially after you get the advanced iridium rod and can use the quality bobber along with the trap bobber.
Money is a lot easier to make since 1.6. I don't speedrun or concentrate hard on making money, and I still find myself hitting the first million about three seasons earlier than I used to.
