I have 85 beets growing, how much money will I get exactly?

There's nothing bad about being in Year 7 of any game, especially this one! You're just playing it your way, which is one of the thousands of right ways to play Stardew Valley.

If you want more earnings, I find the easiest thing to do is:

1. Make a bunch of
Quality Sprinklers (or better!), however many you want. That can be 6 or 20 or anything else, whatever you want. Maybe you already have those watering your Beets.
2. Plant crops that you can only harvest twice per season but each one sells for a lot:
Rhubarb or
Cauliflower (Sp),
Starfruit or
Melon (Su),
Pumpkin (Fa). Some people like to plant reharvestables like
Blueberries (Su) or
Cranberry (Fa) and not replant at all!
3. Sell directly or process them in
Kegs and/or
Jars for more profit.

If you have the Greenhouse open and have found
Ancient Fruit Seeds, you can plant them in there (with Quality Sprinklers) and when you get an Ancient Fruit, run it through the Seed Maker to make more Ancient Fruit Seeds and eventually fill up the Greenhouse with them. This is a very popular strategy. It kinda runs parallel to step 2 above and you can process them in step 3.

Answering the question in your title, assuming you're at Farming Level 10, the percentages break down this way:
46% regular quality
33% :silverstar: silver quality
20% :goldstar: gold quality

so from your 85 Beets you'll see about:

40 Regular Beets at 100g/ea = 4000g
28 Silver Beets at 125g/ea = 3500g
17 Gold Beets at 150g/ea = 2550g

...for a total of 10,050g. If you chose the Tiller profession, then add 10% to make that 11,055g. If you process those in Jars or Kegs, you will get more money but have to wait a bit longer.
