I know just saying this is going to upset some people sorry. I am a massive fan of the franchise. Ive just recently completed SOS a wonderful life remake which I love love as well as the original I don't if my expectations where too high as in my opinion wonderful life is the best harvest moon game. It starts off hard you start with nothing no animals and a few seeds in the ground. Money seems to be off like you sell anything you barely get 100g for it yet every this is super expensive. All the shps have different opening and closing times and where they are open its not long they all have different closed days which I found confusing. For one cow is 5000g for special cows its 10000g then you have to pay 2000g for a milker but oh wait you have to wait for the cow to mature! As for the chicken is 1500g then you have to buy food for it and the eggs are only worth 60g! Mining is so annoying it dont save any progress so when you get to the silver or gold level your sent to doctor because your saitama and fatigue is rubbish eating gives you half a peach back energy medicine cost 2000g the sonar is outside which is affective but also pointless because your dead be the time you het where you where! The elfs are annoying they all like dislike different things it take so long to befriend them the all they do is conplain about the work! Fishing didn't gey as far as that! Over all super disappointed was really looking forward to playing it so im returning it sorry I dont understand the hype! Hope and not the only one to feel like this

I feel so sorry to say that it is not well-structured essay, but I can help you to summarize your complaints.

It starts off hard you start with nothing no animals and a few seeds in the ground. Money seems to be off like you sell anything you barely get 100g for it yet every this is super expensive.
Yes, at the begining, everything is tough including earning money.
Starting your journey of being wealthy from planting parsnip seeds.

All the shps have different opening and closing times and where they are open its not long they all have different closed days which I found confusing.
It is a part of game. You don't feel like meeting them opening their stores at 2:00 AM, right? That sounds creepy I think.
You will be familiar with their daily routines shortly.
Don't be anxious, you will get used to it soon.
What you need now is patience.

For one cow is 5000g for special cows its 10000g then you have to pay 2000g for a milker but oh wait you have to wait for the cow to mature! As for the chicken is 1500g then you have to buy food for it and the eggs are only worth 60g!
Likewise.
You can turn your eggs and milk to mayonnises and cheese.
But you have to unlock your crafting items before doing that.
Keep doing that. It is worth every penny finally.

Mining is so annoying it dont save any progress so when you get to the silver or gold level your sent to doctor because your saitama and fatigue is rubbish eating gives you half a peach back energy medicine cost 2000g the sonar is outside which is affective but also pointless because your dead be the time you het where you where!
The sentence is quite long.
Let me do my best to figure it out.

You can prepare some food before your stamina/energy is consumed up.
Make as much food as you can before exploring the mine.
Level up your weapon regardless of dagger or blade or hammer.

In terms of 2000g medicine, I think it is a part of punishment of this game.
You should try your best to avoid being defeated or died in the mine/cave.

The elfs are annoying they all like dislike different things it take so long to befriend them the all they do is conplain about the work!
I am not sure what are elfs you mentioned.
If you want to make friends with anybody, go and chat with them even though you don't have gifts.
You will eventually be their friend with your sincerity.

Over all super disappointed was really looking forward to playing it so im returning it sorry I dont understand the hype! Hope and not the only one to feel like this
There is no game which can promise everybody loves it.
But I think Stardew Valley encompasses lots of elements like friendship, combat, collecting, love, decorating, etc.
You will unlock more and more interesting things in late-game.
You can definitely pick one of them to enjoy.

I love The Legend of Zelda - Breath of The Wild.
But nowadays I can still see a lot of people complain it was over-praised even though it has been passed 8 years.
Somebody thinks Breath of the Wild is actually tedious.
Hmmm... I don't want to argue with them.
If anybody wants to dissuade me from playing it, I will just ignore it.
Anyone who tries to argue with me if it is over-praised, then he/she wins.
I don't care actually.

If you don't like a game, just let it go.

I didn't care for the SoS remakes of those two games either, though my complaints were more in regards to the graphical and design directions they went with.

I spent countless hours with the original version on Playstation, "Back to Nature" and adored it to death. I really felt that something was lost in between the original and the SoS remake. The remake felt soulless and devoid of any of the charm of the original. That's just me though. I've felt increasingly let down by the new SoS releases, as they don't seem to encapsulate what made the early Harvest Moon games so good.

Though, as Mango alluded to, every game is not for everyone. Perhaps I have just outgrown the SoS games. And that's ok. I've got Stardew, and it is more than enough to keep me happy and busy when I've got the farming itch to scratch.

P.S. Mango, Breath of the Wild is an amazing game! Though, I presonally prefer Tears of the Kingdom a tiny bit more, now. 😉
