In the mines I find ore very slowly for some reason. Does my luck every day have to do with this?

The best way to target ores are to reset specific mines floors that are a) open, b) relatively easy to see everything, and c) easy to reset
This means 21 for copper, 41 for iron, and 81 for gold. If you want to target iridium ore you just have to go as deep as possible in skull caverns, generally with explosives, ladders (or some stone to craft them when you need), and a load of food.
