It does count pause time just weirdly, I believe it doesn’t count menu pause time but does for when you are in an animation, loading screen, fishing menu, etc.

I've started playing Stardew Valley a few months before update 1.4 was released. Currently, I have about 350h on my first farm (and still counting), around 250h on the second one, 150h on the third and fourth and more or less 50h in the handful of other ones. That's a grand total of 1050h, which equals to something like 43 days during the last four years.

One of my new rabbits just chewed up my computer charge cable, so my play time on the switch is about to skyrocket while I wait for a replacement to arrive.
I just love how Stardew is - for me - perfectly balanced to provide all the happy cozy farming vibes without pressuring me to expand/perfect everything until my brain explodes.

According to Steam, I purchased SDV in 2019. I would SWEAR it was earlier than that. But ok. In that time, I had one save that was my "starter" save. I chose the wrong layout for me, missed a few things that were important to me early on, etc. I made it to year 6 and spent 214 hours doing so. My second save was up to year 11, 470 hours and was 86% complete. THEN I decided I wanted to share this game with my subscribers. I started a new save and I'm on year 4, 125 hours and we don't know what completion level is as we can't get to the place to find out (coming soon!). This save will be THE save that I make it to 100% completion. No idea how many hours it will take and I don't care. It's all about the journey for me!

I just started a year ago and am disabled and not able to work, so have lots of free time. I’ve had lots of farms, some for a few in game weeks or seasons, several for a few in game years. Now I play my files much longer. I have deleted most of my farms so can’t give true estimate. But between the play time, wiki/forum reads, and in game menu time it’s probably an embarrassing amount (probably close to a thousand hours 
) that only those die hard fans here and in my situation could understand. People outside of Stardew fandom would think I’m crazy. But I can’t afford to play most pay to advance, upgrade or update ‘free’ mobile type games. I’m also in my forties, the very beginning of the very first Nintendo console world era, and so have a great fondness for simple pixelated type games. So this truly tugs at my nostalgic heartstrings. 
It’s really the only game I play right now. Pay low price, once, countless play options and just loads of nostalgic pixilated fun.

I started playing SDV in 2019, and because I'm an notorious beginner, I now own 44 saves, and that's not all of them, I already deleted a few. Some of them are probably no longer playable because they're still version 1.4 or so, and some are not mine, but my grandson's.
But I've just realised that I seem to be gaining stamina lately. My longest save is the 3rd (from the top), finished on day18 of winter, year 8, after 360 hours 43 minutes. That's SVE though. But the vast majority got cancelled in year 1.
Wanna know why Freya did amass much more gold within less than four years than Amanda? Because my grandson has been hiding behind Freya's mask for some time now, and he's found out how to get a whole army of iridium statues and make at least 10,000 g extra per day. I do not care about money, but he's utterly fascinated by this stuff.

almost 1000 hours on my main farm... couple hundred hours lost... 200ish on other starts to other farms and a couple hundred helping others farms...I think i'm really 15-1600... 60 to 70ish actual days in the valley. A lot of it came from playin 1 in game day everyday... but the other lot of crazy time was spent with it early on 4 or 5 hours at a time.. I'd do it again to with the right MP players.. It was fun

I deliberately take steps to conceal from myself how long I play video games; I often leave them open and running in the background, so when I see hundreds or thousands of hours I can use that as justification for disregarding the amounts. 'Oh I haven't played that long, that includes a lot of AFK time' I can say. Meanwhile the actual totals are likely still hundreds or thousands of hours, but since I have no idea what the actual total is I don't have to worry about it XD
I'll get the current listed amounts once I get home but yeah, it's a lot.
Edit: Steam has it at 1199 hours, and I didn't originally buy it on Steam, I bought it on GOG. Again honestly no idea how many hours I actually have in the game.

I've been playing SV since March 2020 - the file I played the longest was for 6 years in game, only around 150 hours.
I went back to play it recently but it was heavily modded and the save file broke with all the recent game updates.
But on Steam it says I've played SV for a total of 420 hours - 17 days in real life well spent.

Stardew Valley and Bloons TD6 are really the only long term games I've been playing.
My son got me to start in July 2019.
I have one Perfection farm that's 282 hours in Year 5. I don't really play it any more.
My other main farm is 174 hours in Year 3, and I am just having fun doing Qi quests, Special Orders, and Skull Cavern runs and a few things I have never done before like enchantments and forging.
My longest other four farms have 50 to 100 hours.
