It's pretty easy to feel burnout from just being completely overwhelmed at the options you have and stuff you feel like you need to get done right now. I like to say that Stardew is absolutely a scheduling game over anything else, but you're given a lot of freedom in how you can take that.
The main thing you can do to avoid feeling overwhelmed is remember that you don't need to tackle everything at once. Not only is it pretty unreasonable but the game doesn't really pressure you to do anything fast or to always be doing something faster/better/more efficiently than the last time, you can slow your pace and do everything one at a time. Another thing to keep in mind is that you can stick to the stuff you like, sure you may eventually have to fish but if you're dreading it, why do it? it's just a game, do what you want and have fun, no need to make it into a chore that you have to get through to do stuff you want.
Those things really help me get through periods where I don't feel like playing a file, I just remember that I can do whatever I want and enjoy my time.
