I usually don't care for too many animals in other farming sim games (ie. Story of Seasons), as they can be a big hassle/time waster. However, in Stardew, once you've got an auto-grabber, they become quite easy to care for. Even more so once you get auto-petters.

You could certainly play without animals though. If you're worried about needing their products for certain things, the travelling merchant can sell them occassionally.

I am currently livestock free, but this is temporary. I am raiding the Volcano excessively, so i have to depart early in the morning and spend most of the day there, working my way to the 9th level's chest; until i collect all items (i still need Phoenix Ring and Dragontooth Hammer). Sold my animals in year 3 and now i am in year 7! I estimate waiting until ~year 10 or so, because i also need to finalize my farm layout, plus i need to skip days quickly for certain vendors' goods, first!

Raising and maintaining animals is good and all, but requires much time, even for a quick petting; let alone gathering their goods and processing them. In my previous-previous save, i constructed a big shed full of mayonnaise, cheese and wool machines complete with hoppers, because animals products stockpiled in the hundreds, while i was after other things (and still couldn't find time, even for picking up the automatically produced items)!

From what i gather, they should be the finishing touch, unless your economy revolves around animals.
 
Did get a coop in the current save, but it's only half full, and no barn. At least eggs is OK to pick up, but milking and shearing and that stuff is a pain, milking into thin air half the time.

Apart from for CC reasons, going without animals is fine tbh. Will Marnie get upset? 👀

No she won't because if you take care of your cat/tortoise/dog then you are treating your animal well then she shouldn't be mad

The nice thing about the game is you really don't have to go for animals at all, or can hold them off for however long you wish.

I often do the same, as I go joja just out of general boredom for another cc run, I'll hold off animals until I have the whole suite of autofeeder/grabber/petter then make the buildings and leave them passively to get cooking/shipping/crafting ingredients, no want or need to bother manually petting or bothering trying to use them for early game money which they aren't really suited for.
