I would say it depends on where you publish it. Here in the Forums I've seen noch creds yet, but I red quite a lot SDV fanfic on Wattpad. There the authors usually commend, that they don't own the characters except the Farmer/Reader. Maybe you should have a look there?

That's a good idea honestly, get a rough feel for what people are doing. There's also a whole page somewhere on the official website for what you can/can't do with stardew assets, and it might cover your case too?
