Like the new village board and Mr.Qi's screen, count towards the "craft all items"? I mean, you need to build a solar panel, a farm pc or any other new, specialized gadgetry, earned exclusively from those 2 sources, in order to unlock the achievement?

Yes, in order to get the "craft all items" achievement one must craft every item that has an obtainable recipe, including the ones you get from completing tasks on the village board and those you can purchase from Mr. Qi in the end game.

The only item that is craftable and doesn’t count towards the achievement is the wedding ring.
