This isn't something I can personally speak to, so I can't give an answer, but maybe someone else here will be able to! I also wanted to mention that we do ask people keep messages in English, outside of the Multiplayer (LFG) section.

There is a mod called stardew access that blind/visually impaired players can use. It seems to be available in English, French and Chinese.

It really depends on device and level of impairment (and more of course). I'd say it might be a struggle on small phone screens, especially if you want to zoom out and see everything instead of playing very zoomed in. If you are playing on a tablet it's absolutely playable, with the screen of that decent size at a close distance it should be quite legible.

One thing that may be hard would be item descriptions/letters/written notes, I'd recommend mods, there are screen reader mods and I believe ones that can impact font size too which I would find a big help even without any vision impairment.
