I'm seeing this on mac too. There was another report that if you use an auto-grabber, things have their correct star quality. I'm assuming the mayo gets a star because they're large eggs (although of course no-star large eggs).
That's right! Forgot that mayo gets a star because of large eggs. So the eggs really are just normal then.

It happens with small eggs. Oddly they appear normally with the autograbber. It’s definitely a bug. No mods installed, new game.
Can confirm. All Coop animal products (all eggs, duck feather, wool, rabbit's feet) are normal quality when being harvested from the ground of the Coop and cannot gain quality stars. But, if you have an auto-grabber in the coop, all animal products can have their normal variance in quality. Don't know if this is also happening with Ostrich eggs and Barns (never had an Ostrich), but might want to check it out if eggs appear on the floor there since it seems if animal products touch the floor, they can't gain quality stars.
