What are bananas good for? I have two trees planted on Ginger Island but I have no idea what to do with the produce. Same for Mangos, what do I do with the produce?

Mangoes are loved by Leo, and bananas can be used to complete a golden walnut puzzle and craft the island obelisk. Also, both can be traded for furnishings at the island trader.

Same thing as what cherries, apricots, oranges, and peaches* are used for - some of them are loved gifts, but mostly they're just a different type of crop that can be sold for cash. Also the things ISSsloth mentioned.

*leaving apples and pomegranates out because they're used for the community center

According to the wiki, banana is 150, pomegranate and peach are both 140. Mango is 130.

Thanks for the correction, I'm working with the information I can gather from research, as I don't have my game in front of me to test these things xD

You need 1 to get 3 golden walnuts.

You need 10 to get the island obelisk.

Bananas are the most expensive tree fruit. In my greenhouse, late game will be 1 of every fruit tree unless that fruit tree has food that can be made from it. So I have 2 apple, 2 apricot, and 2 mango trees (plus the 1 of everything else you can get at Pierre's) and then I fill the rest in with 8 banana trees.
