Has someone ever obtained 999 sashimi using legendary fish II

That would take a crazy amount of luck to get it in two years, though, because Qi Quests only show up once a week, and there is no guarantee that it would give you the Extended Family quest. Catching the fish would be the easy part at that point!

Wouldn't it be funny if they were all iridium-quality as well?

So are you saying that the quest to catch the Legendary Fish - Part 2 - is a repeatable quest?
And although I didn't realise this until very recently, you can catch multiple Legend IIs within the the quest's duration, just don't complete the quest (i.e. catch the other fish).

So if you wanted to, you could spend your three days just catching Legend IIs over and over again, which is how anything like this would be possible.

@BlaDe 's Stardew analytics are crazy-awesome. If I was any good at Forum searching I'd find his Flower Pixel Art creation on Ginger Island and link it. If you understand how Flower colors are determined, you will appreciate the ridiculously extensive planning that went into that creation. It "looks" simple - just pixel art, right?

When I catch a legendary fish, I stay far far away from the kitchen. The fish goes directly into a chest that I have in my farmhouse. In my current save, I have every legendary happily swimming around in a fish tank.

And if someone told me that they made 999 "legendary Sashimi", I'd probably call "bull". After all, can it really be proven? Unlike Wine that can be distinguished by what was used to make the wine (i.e. "Apple Wine", "Strawberry Wine", "Ancient Fruit Wine", etc.), sans mods, there are no such things as "Anchovy Sashimi", "Carp Sashimi", "Sturgeon Sashiimi", etc.; "Sashimi" is always just "Sashimi" in vanilla Stardew Valley, regardless of which fish was used to make it.

Do note wild bait DOES work on the legendary family. Combine it with a curiosity lure for higher chances of catching them.
Is this for the Lengendary, or the Legendary II families?

Since the original post just says "legendary fish part two" and not the Legend II specifically, you could speed it up a little by catching Glacierfish Jr. over and over since it has by far the highest chance of being hooked among the legendary fish. Would still take forever though.
