I don't know for sure when Gus will open a shop at the Ginger Island Resort. but as i remember usually it's wednesday or thursday when it doesn't rain, or another option often check the stardop saloon at 12 noon if there is a chest on the bar table, it means he is opening a shop at the ginger island resort.
There is no schedule for folks going to Ginger Island. It is completely random, I'm afraid.

That is a bit of a bummer, especially when a certain aspect of the game is tied to a person being at the resort. At least for Gus, he should have a set day he is there, in my opinion!
I would much prefer if there were random days that Marnie were open.

And why can't she put a box out when she's not there all the time not just when she's at GInger Island?
Doesn't the Trash bear change what he wants eventually? So if you can't procure something you can go back later and they'll ask for something else?
I may be wrong, but I think that applies to the individual items based on season, but once the recipe items come up they stay the same. It's been the Tropical Curry for the last 2 or 3 in-game seasons. I'm coming up on winter, so I will soon see!
He can ask for fish, which are seasonal and they change when they go out of season. Since there is no season for cooked food, it'll stay the same.
That woud be even more annoying though because she would still have a 2:5 ratio of not workign to workign days and they would be unpredictable.
