Ever since I sold 3 out of my 12 pigs and replaced them with cows truffle production has plummeted. Even allowing for the fewer number of pigs, production is less than half of what it should be. This evening’s harvest yielded no truffles.

All of the pigs have 5 hearts in happiness, are older than 6 months, are petted daily and have a roomy paddock to graze in. Does anyone have an explanation?
 
Did you recently have anything happen which would change the amount of empty tiles available? Even grass stops truffle production, they're at their best when they've got a bunch of barren dirt to work with.

Assuming they have primarily empty tiles, a pig even at 0 happiness has a 99.99% chance to produce a truffle each day. As such the chances of 9 not producing one is approx 1/1 Quintillion, which is to say essentially impossible. This means either they don't have empty tiles to work with, or they're failing some other element of the requirements to generate one. Those requirements are:

Must be fed.
Must be outside.
Must not be raining or snowing.
Must not be winter.
Must have empty tiles on which to generate one.

I found truffle production very uneven, with pigs skipping some days and then making up for them later in the week. I'm getting the largest amount of truffles in the Fall, as if the game kept a tally of how many my pigs should have produced over the year vs. how many were actually produced/collected -- and if I'm due some extra truffles in the year-end balance, the pigs will make them.

(Or I'm just a lousy at maths and even worse at finding truffles in the grass. This is also a strong possibility.)

Available empty tiles is my nemesis when Truffle production is low, and I could see how someone might run out of Hay in the Trough if someone had let their stash from the previous Winter run out before harvesting some in the Early Spring. Random someones, but only rarely me. I also get very uneven production but I don't think I've ever gotten zero Truffles on a sunny day in Spring, Summer, or Fall.

Have you checked weird spots that you don’t think the pigs should be able to reach? I’ve found truffles on the wrong side of the fence, behind a mini shipping bin, under trees and in tall grass. They’re sneaky little things

I also have truffles often spawned on spots that are unreachable for the pigs (separated from them by one to two tiles), so if the pigs are behind fences (especially high fences), I would suggest searching on tiles right above these fences.

For example, I sometimes have truffles hidden by tree trunks or flowers barrels placed right in front of them and the two objects sharing the same colour, this makes the truffles hard to spot.

Nope neither barren ground nor green pastures have mitigated their porcine behavior. They are just naughty, resentful, ungrateful pigs.

After seeing that screenshot, I might say it is possible that your pen is too small and you have too much grass. If you want them to find as many truffles as possible then you should expand your pen and cut down your grass. If that doesn't work then I really have no idea.

With 9 Pigs and 5 hearts with each, you should be seeing more Truffles than that. I have 9 Pigs, none with 5 hearts, they just spent the Winter inside and they are giving me about 8 Truffles a day. They have a little more space to roam than yours but that shouldn't make such a difference.

It could be up to the names for your Pigs. Mine:

Ham
Loin
Bacon
Football
Pork
Ribs
Sausage
Stuffing
More Bacon

Methinks your Pigs need to live in fear of their lives should their production falter.
 
It just varies. In one playthrough each pig gave several each day, like, 4 per pig. In my current playthrough my pigs give a few a week. Most of my farms it's been 1-2 truffles per day per pig. I don't do anything especially different. Maybe it's game seed.

For me with almost two barn-fulls of pigs, I can agree about this. On some saves with the same amount, much less production happens. I suppose it might also depend on the year or season, but my fully happy and well-fed barn-fulls of pigs will behave differently on separate saves.

I have had the pigs produce over 23 truffles on the same patch.
