New winter vegetables

Sounds fun, a few crops for in the Winter, when most stuff died and can't grow.
Some use Winter to have a calmer time, some would like something for that season, too, as in crops, outside of the Greenhouse.
I always plant the Winter Seeds, but crops are even more fun, imo.
Nice extra, and if there'd be some decent healing dishes that require these crops, then we can use those, while waiting for Spring.
And people who do challenges like not using the Greenhouse(or in year 1 without Red Cabbage), can also plant some crops, while doing other stuff.

Maybe start with a small list, like few crops from year 1 on already, and then year 2+ ones, and some far in the game.
Then having some quests requiring them is always nice.
I thought of having a special dish, quest, NPC, dungeon, clothing or anything else, that requires some from all 3 of these times(year 1, year 2+ and far in the game), so we'd need to keep some behind until far in the game and past year 1.

Traveling Cart shouldn't have it, so we'd need to earn it :D
 
I like farming (oddly) in farm sims, but having only winter seeds can feel a bit boring and stifling. I like the idea that not much grows in winter, so you need to plan ahead of time, but 1-2 crops would be a nice calm but still something to do idea as well.
There is some winter seed...

Other things for Winter are to make a ton of Fiber with Fiber Seeds, which are a key component used to make a nearly game-breaking amount of g with Tea Saplings. And those Winter Seeds that everyone mentioned can also be used when making Tea Saplings. As is Wood from regular Trees, which can also be grown in Winter.

Hmmm, looks like there's a purpose for Winter after all...

Thanks for the tips. But nothing wrong with wanting more activity in winter, especially if you’re a farmer—even more so if you know for a fact that there are plenty of crops suitable for winter that are not ugly weeds. Perhaps crafting and lumberjacking are not for everyone.
