That depends a lot on what you are foing on your farm and your playstyle.

Generally people agree Botanist and Artisan are the best for Foraging and Farming.

Check the wiki for descritptions of the others and figure out what is best for your playstyle and farm right now. You can always change again later.

'Best' really depends on what you like to do and what is on your farm. If your main income is barn animals for example, artisan perk becomes less worth it. The best I can do is tell you my perks on my Year 3 character I have got a lot of success with
Farming: Tiller and Artisan
I grow ancient fruit and turn them into wine, so these are the best for my profit. It is worth noting that for absolute min max, you can take the animal professions, then save up artisan goods in a chest then switch at the sewer dog to the artisan perk to sell and then back.
Mining: Miner and Prospector
Mining is a time consuming activity that you want the most ore out of as possible to make more processing machines when you get later in the game, these skills help you most there.
Foraging: Forester and Lumberjack
Same as mining, also to my knowledge you can't buy hardwood anywhere so the more the merrier.
Fishing: Trapper and Mariner
I have caught every fish, I no longer sell fish for income. The angler skill should be taken until fish feel like they're worth nothing compared to your wine and cheese. On average a day's fishing is worth 10,000g if you know what you're doing. These skills affect my crab pots which produce fish items for recipes. I don't take the other skill because bait costs 5g only. It isn't worth a level 10 skill point.
Combat: Fighter and Brute
This one is very simple, these are the best. Damage increase is reliable, crits are not. The mines are easier with reliable. I combine these attacks with the infinity gavel enchanted with artful and damage buffed again with rubies. The level 10 health talent feels like a waste because it's only 1 more hit you can tank.

While I agree with much of what @cyre said, I would like to bring up some opposing opinions for folks considering their professions to think about.

Farming: Tiller is obviously the way to go... animal perks just aren't worth it because you will never have enough animals and animal produce to make them worth it when compared to the amount of stuff you'll be selling that Artisan will boost and boost the costs by more. However, Artisan is about quality of goods, and there is something to be said about quantity. Agriculturalist, especially if you're on a Beach Farm and only have 202 tiles that sprinklers can touch, can make a big difference in the quantity of produce you have available to process into preserves/wine/food. Pick whichever works best for you.

Forage: Forester/Lumberjack can get you hardwood in quantity, sure... but may I suggest not going Forester at all? You can easily get plenty of wood. And with 1.5 you can easily get plenty of hardwood. Mahogany trees can provide all you need, so there's no need to go Lumberjack. Gatherer gives a chance of double forage, which applies when you're gathering truffles, I should mention, as well as the fruit in your cave (if you go fruit bats). Then you can go Botanist and it's all now iridium quality, which means two things. If sold, you've maximized the value, and even when not sold, now it only takes up 1 spot in your inventory instead of 3 because you only get iridium quality... not gold and silver and regular qualities.

As for Mining, Fishing and Combat, cyre's choices are the same I make for mostly the same reasons.

You can try to be more flexible with the profession since you can change it anytime you want. I assume at that point of the game, money is not too much of an issue.

Normally I have tiller+agriculturist because I'd rather have 1 extra harvest. At the end of the year, I would change it to artisan to sell all of my wines/juices all at once. After I'm done with selling them, I immediately change it back to tiller+agriculturist.

Same situation with botanist vs lumberjack. I almost always have botanist perk because it's helpful for inventory management. But when I want to collect hardwoods, I would change to to lumberjack for awhile efore going back to botanist. Yes mahogany trees can give lots of hardwoods, but with that forester+lumberjack you can get soo much more. I planted like 50 mahogany trees at once and then chop all of them at once. After I'm done with that, I replant the trees and rinse and repeat.

Similarly, normally I have miner+blacksmith/prospector which is useful to farm ores in the mine/skull cavern. When I'm about to sell my diamonds from the crystalariums, I would change to gemologist before going back to miner perk.

For fishing, initially I chose pirate. After I'm done with the museum stuffs, I changed it to mariner.
For combat, I always have brute.

Personally for fighting I prefer to use a hammer - if you mash left click after doing the right-click special attach you get a bunch of extra strong hits. If you're doing that, Acrobat is a useful perk in order to decrease the cooldown time on a special attack. If you're not using a hammer, however, I agree with what others said that Fighter + Brute is the best.

We recently had a thread about Mining skill choices. Short version - depends on play style. If you plan to get iridium from iridium nodes in Skull Cavern, take Miner/Prospector. If you don't, take Geologist/Excavator.

I completely agree with imnvs about Foraging. Wood is plentiful, hardwood is also plentiful (mahogany trees), so the quality of life from Botanist is the clear choice in my opinion.

I feel like taking forester/lumberjack temporarily if you have very little wood/few grown trees might be an okay move, but as a long term investment botanist does have way more potential.

That said, swapping is what, 10K? So if you can yield more than 200 extra wood from the swap (not counting any hardwood) then it's already paid for itself (assuming year 2+).

It costs 20k because you have to switch back, too. 😉

I go Pirate on fishing to complete the museum, but rarely bother changing it. I fish for fun not profit.
Fish are friends not food?

On a related note, Pirate might be the way to go if you're having trouble getting that blasted dino egg. Just stack on all the treasure hunting tackle you can get your grubby little hands on and you'll be fine.
