How about Groundhog Day? I wouldn’t mind a little extra winter from time to time.

Pizza festival sound funny. Could also be a more general cooking festival with changing receipts to cook.

We have so few days... more holidays would start to interfere with getting work done, wouldn't it?

2 holidays a month already plus 3 night market days. So that 11 holidays but thankfully 3 do not block off work. If they did anything else have it occur with or without you.
Examples fun in the sun day: where lewis takes all the residents to ginger and the proceed on their own adventures. Like leo shows linus, has and vincent his old house. Seb and abby go to the volcano. Evelyn and george hang around birdie talking about how things have changed. Shane finds a ostrich egg.

Fireworks stand. Kent goes to the beach and does an amateur fireworks display. If you get him the materials he makes a cone heads reference.

Community day. The town visits the community center and has a micro version of the completion event that takes course over the day
