Make 10 gold per player by the end of the game.

I read this as it being completed as soon as you have 10 20 30 or 40 gold as your total in game then you can spend it correct or do you need to have this much gold at the end of the game?

You need to have it at the end of the game. Essentially, it's the last thing you'll "complete."

We've found that we like to keep track of Grandpa's Goals we've completed by flipping them over; for this particular one, we just stack gold on top of it as a "just in case" reserve that we can draw from in an in-game gold emergency. :)

This is correct! And setting aside gold like this is a good way you make sure you don't accidently spend it :)
