As for the night market, i skip it. Every time. Cluttering up my docks and moving my chests and making it so i can only find trash in the water...
Ever since I realized that submarine fishing is the best way to get seaweed, I've made a point of going, and still do, even if I'm at capacity for fish ponds. Especially since it starts late enough that I can get my chores done first. I smoke the catch, apart from sea cucumbers. Just about the only other time I bother with fishing is when I get an Extended Family quest.

I skip coops too often - sometimes I can't even walk in them any more because of all the eggs. (Until I get an autograbber, of course.)
I've got autograbbers and autopetters in each coop and barn, and over a dozen spares of each. Which is another reason I feel I can skip them. Each coop and barn holds the machinery to process the stuff its animals produce, so I don't want to leave them for too long.
 
I myself never skip any festivals no matter where I am with production or other plans.

Once I finish the main plot points of the first 2 years' worth of stuff, sure I save for perfection, but the festivals make me feel more human and stay connected to the people.

Plus, they're great breaks in routine.

I'm still learning smokers the old fashioned way, but I usually cook for profit. There's some pretty good recipes out there like Fiddlehead Risotto and Algae Soup that sell for a decent margin, but that being said, Maki Rolls are more profitable than Sashimi, in case you didn't want to smoke your low-end fish. You have to make your own rice though, which i usually don't have a problem with. It's always the seaweed that is the determining factor for me, so it's good to know where i can find lots of it.

Then a Crab Pond would be pretty good, they also give you seaweed 😄

The low-end of the submarine specific fish is on par with largemouth bass, and the sea cucumber is the absolute lowest value fish to catch there. So they're worth smoking, especially for me as I've got more coal than I can easily use. But sea cucumber is better off made into lucky lunches.

The stuff I tend to make sashimi of is mussels and periwinkles. Those kind of stack up for me, especially mussels once I reach Ginger Island. Once they made up about half of the sale value during a Qi Cuisine quest when I sold somewhere between 650 and 700 sashimi.

*does math on maki rolls* Add 120 G (sell value) worth of ingredients... Increases profit by 25 G per dish compared to sashimi. (220 - 120 - 75 = 25) Nice additional profit, but limited to the least plentiful ingredient, usually seaweed. I put the fish at its sell value as sashimi to make it a constant. I admit I'm often too lazy to consider cooking up maki rolls.

Today I found the skeletal hand. This is usually one of the last artifacts I need, so I'm happy about that. (Having said that, I'm sure that the game is now going to give me dozens of hands and I'll be stuck looking for ribs or skulls instead... LOL!)

What I'm less happy with in this game is the sad lack of rain days. Only three in spring, all in the first two weeks. By the time I was confident I could catch catfish and eels there just weren't any more rainy days.

I like making sashimi for the Qi quest. I make sure to regularly crack those mussel nodes just to have a good supply.

I reached year 9, and tallied up my stack chest. About 47.7 million more in it than last year. I also sold "outdated" stacks for about 17 million over the year, but I forgot to write down what I had earned before year 8 began, so I'm not entirely sure. I switched out all stacks worth under 500,000 G, the last two of them on the very last day of the year.

I think that this year I'll work on switching out the stacks worth under 900,000 G. Fewer stacks below the cut-off point this year, but also fewer types that can replace them. Just me having fun with numbers and math on my way towards the 1 billion goal for the farm.

Guess it's about time to make another update on my progress thread too...

Make sense, and I 100% agree with you.
I have my stack of sashimi fish and my stack of maki roll fish, due to the limited availability of seaweed. Fortunately I enjoy fishing in the ocean, and will sometimes cast with the intent to pull up seaweed, but also sometimes i just want to catch a puffer or octopus, so much of my seaweed will come accidentally.

I'm curious as to what some of your favorite fish to catch for-profit are. Halibut is up there for me, but also tiger trouts.

Past Spring and Summer of year 1, fishing for profit kinda falls by the wayside. Halibut is a good one then, since it's easy enough to catch even at low levels, one of the few ocean evening fish, and has a decent value.
In a way I do fish Legend II for profit. First for putting in ponds for the roe, and now for smoking. But the Extended Family quests are few and far between. In year 8, I added 4 full stacks of aged Legend II roe to the stack chest, just to illustrate how much of a profit they bring me.
