I need a LOT of flour

Ok so bear with me here, im making a crab cake farm so that i can have unlimited crab cakes forever, ive already got a renewable (and completely free!) source of all the materials BUT im missing the flour, should i just buy a ton of it from pierre or is there a more efficient way to farm wheat for free? (i kinda plan on making a guide on this infinite food trick later)

You can grow quite a lot of wheat in summer and fall, all year round on Ginger Island and in the greenhouse, and anywhere indoors if you use garden pots (preferably with deluxe retaining soil so you only have to plant and harvest after your one time of watering them).

The garden pot strat is what im doing for the corn so i can get the oil, wont the fertilizer get removed when i harvest it? multi-harvest plants dont get removed like other single harvest ones

Yes you lose the retaining soil if you fully remove the corn plant from the pot. You won't lose it harvesting wheat.

You can plant a lot of wheat over summer and fall all over the main farm without sprinklers but use rain to water. It's only 4 days so not too many rain totems needed just depends on how many crops of it you want. Then throw it all in the mill.

What's better for crabs, a pond or setting up dozens of saltwater crab pots?
I would say, it depends on how much you need and which map you're playing. Beach Farm has easy access to saltwater, this might be better for pots. On other farms the Fish Ponds might be the better option, so you don't have to go to the beach every day to refill the pots. Crabs in a Pond reproduce every 3 days, so you can fish a few out every couple of days. I probably wouldn't clear the Pond, otherwise you might have to do the Pond Quests again.

Without mariner profession, you have 25.7% chance of getting a crab in a crab pot with crab bait so roughly 1 every 4 days per pot. In a pond they spawn every 3 days. The ponds take up more room and cost more. So I'm thinking crab pots are better especially with Mariner/Luremaster and The Art O Crabbing.
