Both Steam and GOG have older v1.5.6 versions of Stardew available for some platforms.
Steam on Windows:
Right click Stardew Valley and select Properties
Click Betas
Click the None popup next to Beta Participation
Choose legacy_1.5.6
gog.com on Mac:
Log in to https://www.gog.com on the web
Hover over your account name and choose Games
Find Stardew Valley
Click down arrow at right and click View Downloads
Under Extras, choose MAC 1.5.6 32bit Build
These aren't the only ways but what I have access to right now.

In addition to what Lew said, unfortunately for other platforms there really isn't an alternative beyond having just stopped updates altogether for the app before the update released, something that's only really possible to consider in hindsight

Disappoint im 1.6 since they tool away my way of fsst forwarding perfection mode at the Ginger Island cave...where JoJo gave me a percentage that I paid for in advance. No longer will comply. Instead he shows me a music note above his head. What does this mean?

What are you talking about? Buying perfection waivers was introduced in 1.6. If you went back to a 1.5 build, the man would not even be in the cave.

There were many things I didn’t like about 1.6 either. It is so much harder to get natural resources I feel. Tea bushes went down by half. More emphasis on perfectionism. Among other things. But I’ve learned to adapt, some things are nicer though I’ve discovered. I won’t mention them for fear of spoilers. There are many things I even miss about 1.4. But you might discover new nice things to cheer you up along the way. But if it’s too unbearable your only choice for “legacy 1.5” versions are the PC versions. Steam has it and GOG I believe. But if you are on another platform I’m sorry to say it’s gone forever. But trust me there are some fun things that might make the losses worth it, or at least more tolerable. Best wishes!

I think they may be referring to the music note Mr Fizz will show above his head if perfection has been bought or achieved. Now the light up perfection tracker bear in the walnut room may show less than perfect if they have not achieved the new recipes and such in 1.6, but it will say with (the number of waivers purchased) plus work already done that you have in fact reached perfection. That is why there is a music note above Mr Fizz head. He can’t sell more waivers as perfection has been reached. If you interact with the bear in the walnut room he will give you a statue of true perfection if not already reached. Then go to summit (if you haven’t already) and you will see cut scene. Now if perfection was indeed reached in 1.5, but the boulder by the railroad is still there then there may be a glitch that needs repaired in which they must post those in bugs report forum.
