I voted Leah but IMO Elliott, Leah and Emily have the most flexibility with respect to their backgrounds to give you freedom to create. OK frankly they all do but for some reason those 3 feel more open to me. I've written just a little bit and funny enough I find Penny the most difficult to write for.
However your farmer would give you the most flexibility and focusing on your farmer's interactions with a Villager from only the Villager's perspective would be quite interesting!

Honestly depending on your style of writing and interests, a Krobus perspective would be really awesome, either telling us a story from his past/his people's past, or a more comical 'week in the life' where he just walks around the sewer and does sewer stuff, with maybe a little spying here and there

A tragic story about him in they middle or ending of the 1000 year war between the dwarves and the shadow brutes, how is the only one we can see and how he ended stealing stuff from the people on the surface and selling bombs

Honestly, if I had any ideas for this and how to start it, I would do farmer perspective and shipped with Sam or Alex if the Farmer is a girl. If the farmer is a boy then Abigail, Emily, or Haley

When you marry Penny and have had at least one kid with her, she reports a dream that the eldest had turned into a dove and flown away. This leads me to wonder if Penny had a brother that Pam doved after her husband left because she couldn't afford to raise both. So the general outline is that Pam somehow connects with Rasmodius' ex (who may or may not still be with him at the time) and an ensuing quest for a prismatic shard (which makes Pam good enough at the Skull Cavern to rescue the farmer when he dies there, because who else is even there?) and a deep sorrow that drives her to drink and resent Penny for being the surviving child.
