Does anyone know the percentage chance or the mechanics that determine a baby's skin color in-game?

I believe there are only 2 possible combinations, light skin with brown hair and darker skin with a darker brown hair.

I also believe the selection from those two is fully based on your spouse skin colour as opposed to player skin colour, though it's been absolutely ages since I did any checking of this information so it could be pretty outdated.

Yes spouse skin color and player skin color play a role. I don’t know what shade of skin on the slider color they consider a variable for dark skin but I tested a medium brown shade and had darker skin child. Also if children are adopted I believe you can adopt a child of either skin tone but that is random and not based on skin tone of parents. In vanilla Maru is the only spouse that will determine a darker skin toned child if player chooses light skin tones. Again I haven’t tested every possible shade on the slider to determine at what exact shade the game considers a darker shade for the player.

This is honestly the only fault I place on CA was the lack of diversity in the game. One marriage candidate out of 12 is darker skin tone. Not to mention out of the entire 36 (I think that’s the number) villagers out of the whole town only 2 have darker skin? One may argue Gus has a darker olive tone in his portrait so maybe him as well. It sounds like a suburban white Stardew to me. Just saying. To each their own but that’s what I see. At least he did portray them as being extremely intelligent, and having awesome careers and future careers.

I don't think it matters whether you adopt (same-sex parents) or not. Whenever I've married Maru, which is most of the time, mostly playing as a female, we almost always get the dark-skinned children. And Maru tells me the adopted kid has my nose.

Sometimes if I play as a very light-skinned person, one of the children might be light-skinned, so I think both parents do have an effect.

It's interesting. One of the things I realized early on is that Pelican Town is a rural backwater with a weak economy, kinda like, say, Horseheads, NY. And everyone looks pretty similar, kinda like Horseheads, NY. So yeah, the only PoC among the NPCs are Demetrius, who married in, and his daughter.

Surit is my first farmer of color, and I will tell you, Jodi's "Oh! You aren't exactly how I imagined... but that's okay!" lands really differently when your farmer isn't white. Yeah, backpedal your racism, lady.

So, as for the lack of diversity in Pelican town, I'm afraid that there is a verisimilitude there that we would prefer not to have in our play world, perhaps, but I think it stands as valid social commentary from CA.
