It was really weird to me to have chickens but no mayo machines. In my old playthrough I unlocked mayo machines at almost exactly the same time I got a coop.
I do have to wonder - If you destroy all blue grass are you locked out of it until you unlock the recipe in post game? Not really a problem as Im not going to do that, but still.
Finally- speedrun potential. Does the monetary/items required for coops and chickens out way the benefits of forest farm/getting parsnips? I could imagine having a coop at the beginning of the game might be very helpful for specific bundles, but I'm not involved in the speedrun community so I have no real idea.

It's no different than not having Preserves Jars when starting with the Standard farm as you're starting with Crops but can't process them because you're a new farmer. Same with no Mayo Machines on Meadowlands. Gain XP to unlock recipes.

The Blue Grass will spontaneously spawn at a low rate, that happened on my non-Meadowlands farm when upgrading to v1.6 so if you're patient and manage your Grass, you can end up with a field of Blue Grass when not starting with any or unlocking the recipe.

No clue about the speedrun though as I don't have the mental discipline to do those things.

In Meadowlands, either and both patches of green or blue grass, sprout here and there, every few days or so. You should carefully trim the greens and wait for blue to bloom. In my farm, over the last 2 most recent savefiles of mine, i have blue grass exclusively, everywhere! That is the real perk of the map, not the coop or its contents... Makes animals happy faster and maybe i am mistaken, but i think that animals who eat it also produce better items faster (for instance, i had lots of big eggs much earlier than normal).

Mayo machine may be delayed somewhat, but you can always store the eggs away and then convert them to mayo, at once! Although, big eggs sell nicely early game, you can afford more crops each batch.

Animal product quality is dependent on mood and happiness, so it would make sense that blue grass decreased waiting times. I've never tried selling large eggs, but I'm exited to see how they do!
