All the people I'm currently dating, it's saying they're single. I don't know if this is a glitch, or if it's because I have krobus as my housemate

For Stardew, single is used as 'unmarried', not single as in not dating. I have 11 people listed as 'Single' in my current playthrough even though I'm married to Emily.

I remember the "good 'ol days" when it used to say "Boyfriend" or "Girlfriend" when eligible NPCs went to over 8 hearts.

if it didn’t change, or says boyfriend/girlfriend until you marry someone, then they change to single.

If Krobus is your house mate even if you give them the bouquet it will say single cause the game “registers” you as “married” to Krobus. If you kick Krobus out of your house (via book in mayor Lewis’s house) then it will say they are your girlfriend or boyfriend. If you choose one to Marry then the other’s will still register boyfriend or girlfriend so unless you wish to be cheating on your spouse (which I highly recommend against) you will need to give all of the others a wilted bouquet if you gave them a regular one first.
