There are a lot of explanations that have cropped up over the years. My faves:
• Coding oversight that people ended up loving. Many games have these and often end up being a beloved feature by fans
• Abby's magical as she's really the Wizard's daughter so she can eat what she wants
• Abby's skin is lighter and hair is purpler than her parents so she needs to eat Quartz and Amethyst for maintenance
• Abby's clearly a joker based on her 2
as well as her Doctor's appointment dialogs and this is one more thing she likes to say
• With all the magic in the game, the brightly colored gems and crystals are really just Jolly Ranchers and rock candy to everyone. That's why everyone likes the Rocket/Bomb Pops except Haley who apparently settles for Ice Cream.
