Which build should i do for Infinity Gavel?

I really like how fast the Infinity Blade is but i switched to infinity Gavel because the skill is overpowered but i can't get used to how slow its normal attack is so i gave it 1 emerald so it can speed up but its a bit slow and bats still hits me because i hit too early and the iridium bats from skull cavern most of the time ends up killing me when i'm low should i just adjust and do 1 emerald and 2 ruby build for more damage or should i just do 2 emerald and 1 ruby for more speed

In my experience 1 emerald is enough. It's a matter of relearning the timing necessary more than anything else. If you find that adapting not worth it to you, then going with a 2nd emerald may be a good option.

I usually do 0 or 1 emeralds, but I'm pretty used to the hammer speed.
Also, using the Artful enchant and/or the Acrobat combat perk will let you use the special attack more often, so you can use that instead of the swing.
