As you can see, I have already caught all the legendary fish, except the Angler fish.
After modifying the save file.
First, Create a BACKUP of your save files to avoid damaging them, you can find your save file in C:\Users\"UserID"\AppData\Roaming\StardewValley\Saves
Open the save file by Notepad, and search for character "<string>(O)163"
163 is the ID of Legendary Fish, those code is marked you have already caught a Legendary Fish
The solution is to change this ID to something else, preferably an ID that does not exist in the game. For example, I added a 0 in front of 163, making it became to 0163.
Save the file, and load your save in game, you will find that the Legendary Fish image has turned gray again, that mean you can catch the Legendary Fish again.
BTW ,if you change the current weather to rainning by editting save file, there will no Legendary Fish in the lake, I don't know why. But, used the Rainning Totem to change the next day weather, It does work.
If you want recatch other Legendary Fish, just do the same thing, below are the IDs of all Legendary Fish. GOOD LUCK!
