Yeah, I've seen people who are trying this and it is insane, some of the ones you mentioned are really not that hard though:
Golden eggs
Seeds
Minerals
Rabbits feet
Prismatic shard
Most fish (besides legend II)
Crops

Some that are hard are:
The tea set
auto petter (no joja)
magic rock candy is more of a wait but somewhat hard
Machines

My favorite difficult challenge run is the "have 2 kids with every bachelor/ette" challenge. You have to serially woo and marry literally every bachelor/ette and have 2 kids with each of them, then dove the kids and divorce before going on to the next.

Still, nothing compares to the 999 challenge mostly because of the statues of endless convenience.

Yeah, most other stuff is just wait, wait, wait, but the money ones are a real killer. Once it comes to it though as people doing it will have to sleep over 1000 years minimum, you could just set up a single golden chicken coop and it would make more than 1.5 billion in that time.
Not hard if you just fill the rest of your farm with 10 or more silos and only fill them up once every year or more.

I can't actually imagine doing this challenge. Some of the items, like the golden egg, wouldn't be that difficult on their own if that's all you focused on. I could see it. But to do all the items sounds like a headache. Even the prismatic shards, it would take roughly 9 years after perfection, but it is possible. I wonder how many real hours this challenge would take.

Well they have to sleep a minimum of 1000 years so they could literally have just one golden chicken and refill a silo every year when they do the winter star gifting.
They would probably just have a coop or two of them and over that time it would net them 1-3 billion g.

I think the hardest challenge is playing the game orthogonally to your usual style. So if you usually go big on money, try getting 28 candles in the evaluation missing only the two for the one million achievement. For me it would be getting to Skull Cavern floor 100 or deeper every week. Really depends on the player.

The challenge sounds viciously boring tbh. If you want pain for no reward, we have real life for that.
Honestly that's what I thought when I first heard of this but I've been watching TheAlGoreRhythm do this on Twitch and it's honestly pretty fun to watch. Maybe he's just a good streamer. It helps to vary what you focus on each day and not just do one thing over and over.
I'm still never going to do this challenge myself though.

999 Owl statues will take a while.

This is kind of where I stand. I play the game to have fun. Some of the challenges I have seen people do look like a way to bring back fun if it starts to feel too much the same old same old, especially when they do things to change up their game style and default habits ... but I could never do one that sounds too much like "let's take this thing you loved and make it a horrible eternal grind."

OTOH, I watched the infamous 17 minute community centre victory thing and was gobsmacked. (BUt that required names for farmer, cat and sole chicken that gave you STUFF, which mostly sound like a programming challenge, and the part that really impressed me was where the speed overtook the load and the player knew where to move their farmer when all the visual references were wrong.)
