Stardew Valley Expanded (not extended) adds a lot more than "just increase things you normally do".

This mod adds 27 new NPCs, 50 locations, 260 character events, 27 fish, reimagined vanilla areas, two farm maps, a reimagined world map reflecting all changes, new music, questlines, objects, crops, festivals, and many miscellaneous additions!"
I haven't played with it yet myself because it adds so much, but I suspect the reason is the same as why I added smaller curated sets of mods; I love the game but sometimes want to have some surprises or some freshness. My first three mods were Diverse Stardew Valley because I thought everyone being utterly white except 2 people bothered me a little, automatic gates, because I found constantly opening and closing gates more of a nuisance than such a tiny thing should be, and the Canon-Friendly Dialogue Expansion, which gives the vanilla characters all a bit more to say and is the one I'd recommend to anyone including people who see no point in mods otherwise or people cautious about dipping in their toes. Because suddenly it's more fun making friends with the NPCs again. Having people say surprising but totally in character things is a reward in itself.
