(Quick Question) Does the Switch have less content than other platforms?

I recently started playing Stardew Valley on the switch, so I was wondering if certain platforms have more updates or content than the switch version?
 
No, all platforms [minus iOS and android] have all the same content as of right now from the 1.4 update. Occasionally console ports would be behind PC but I believe he's assured us that wont be the case now.

iOS and Android are also up to date. Just check the link posted above.

Current platform limitations/missing content:
  • Consoles and iOS don't allow modding (that's because of the platforms, not the game itself though)
  • Mobile doesn't support multiplayer
  • Consoles don't allow you to move your saves to another platform
  • Xbox doesn't offer players any way to screenshot their entire farm
It terms of in-game content, PC, consoles, and mobile are all the same. (Note that the Vita version is significantly out of date and is missing a lot, but OP didn't ask about that version).
