Question about the Hoe upgrades.

So for example with the copper hoe it says "may stack 1 crop onto an occupied field" does that mean in one turn of buying seeds, I can plant a total of 2 crops on spaces 1 through 5 if I had enough money? Or would I choose one field to plant two crops on? Like 1 crop on plots 1 through 4, then two crops on plot 5?

The latter; you plant one additional crop for a copper hoe, two for a silver hoe, etc.

Essentially the "limit" to the number of seeds that you can buy from Pierre goes up by one per upgrade on the hoe.
